Mango seed

Every mango has a long flat seed in the center. Mango seeds can be either polyembryonic (a seed with two plant embryos) or monoembryonic (a seed with one embryo). Mango seed has high content of Vitamin B-12, which is lacking in other vegetarian diet. It also contains nine out to 10 essential amino acids, a rare for any natural product. It is also rich in sodium, potassium, calcium, magnesium, iron, zinc manganese and phosphorus.

Mango seed kernels have a low protein content but at the same time they contain most of the essential amino acids, with highest values of leucine, valine and lysine making it a complete protein.

The mango seed is generally consumed in powdered form, or made into oil and butter. The seed or kernel that is generally thrown away or neglected, but this big-sized creamy-white seed in the center of a mango possesses a dense supply of nutrients and antioxidants.

The mango seed is edible, but typically in unripe mangoes. Once the mango is ripened, the seed tends to get hardened, which can only be used in powdered form.

Mango seed kernels are shown to be a good source of polyphenols, phytosterols as campesterol, sitosterol and tocopherols. It is useful in diseases like diabetes, hypertension and cancer. It can also be used as an anti-aging cosmetic product.

Mangos seeds can be incorporated into cooking and used to add flavor to dishes. The seeds can also be used to create infused alcohol or shrubs to include in cocktails.

Mango seeds can also be used as a natural teether for babies. In the Caribbean and other parts of the world, moms will take their leftover mango seeds and give them to babies to sooth their aching gums.
