Anthocyanins are a group of polyphenolic pigments that belong to a class of compounds called flavonoids that have antioxidant effects. This means that they fight unstable molecules, called free radicals, that damage cells and increase the risk of certain diseases.

Anthocyanins are found in the plant kingdom. More than 700 anthocyanins were identified in nature, and they are produced by plants to play a role not only in reproduction, by attracting pollinators and seed dispersers, but also in protection against various abiotic and biotic stresses.

The pigments are in glycosylated forms. Anthocyanins responsible for the colors, red, purple, and blue, are in fruits and vegetables. Among foods with highest in anthocyanins
*Black raspberries
*Black currants

Among the anthocyanin pigments, cyanidin-3-glucoside is the major anthocyanin found in most of the plants.

Anthocyanins are natural phenolic pigments with biological activity. They are well-known to have potent antioxidant and anti-inflammatory activity. Previous research has linked anthocyanins to a wide variety of health benefits, including increased longevity, cardiovascular health, cancer prevention and dementia. Anthocyanins may also improve vision and have a neuro-protective effect.
